Ham and Broccoli Pasta Casserole

An easy casserole using leftover ham with loads of veggies baked in a flavorful alfredo cheese sauce.


Easy casseroles that are quick to put together and use ingredients that are usually in my fridge and pantry are a favorite in our house.
When large bone-in ham goes on sale, we always stock up the freezer with a few to take advantage of the great price.  I think the last time we stocked up, an 8 pound ham was slightly more than $6.00.  After first enjoying a huge dinner of baked ham with all the fixings, I cube up the leftover meat into 2 1/2 to 3 cup portions that go into the freezer for casseroles and soups.

You can clean out your veggie crisper and add veggies that your family enjoys.  I like to start with carmelized onions and mushrooms but adding some strips of red pepper would also be delish.  Our veggie of choice is broccoli for the nice sharp contrast of color and because we happen to love broccoli, but asparagus or French style green beans would also work well.  My pasta of choice is farfalle just because I love how pretty the bow tie pasta makes the dish look.  Feel free to use whatever pasta you have in your pantry.
I also take some help from the store and use a jarred Alfredo sauce – a roasted garlic Alfredo sauce is what you would find in my pantry.  Shredded Swiss cheese gets added to the mix creating a delicious cheesy sauce.

I put a big pot of water on the stove to bring to a boil for the pasta and while I’m waiting, everything else gets cooked and assembled in a large frying pan.  Once the pasta and broccoli are cooked, they get stirred in.  Pour into a casserole dish and bake for about 20 minutes until it is hot and bubbly.

Ham and Broccoli Pasta Casserole

Ingredients
  • 2 cups uncooked bow tie pasta
  • 3 cups frozen broccoli florets
  • 2 cups cubed fully cooked ham
  • 1 10 ounce jar Alfredo sauce
  • 1 cup shredded Swiss cheese
  • 1 onion, sliced
  • 6 mushrooms, sliced
  • 1/2 red pepper, cut into thin strips
Instructions
Put on a large pot of water to bring to a boil for the pasta.
Meanwhile, in a large frying pan, cook onion, mushrooms and red pepper until carmelized and golden. Add the cubed ham and stir for a few minutes to heat through. Add the Alfredo sauce and stir in the Swiss cheese, stirring until melted. Turn off heat.
Cook the pasta according to the directions on the box. Remove the pasta with a sieve or spider and add to mixture in frying pan. In the same boiling water, cook the frozen broccoli for 5 minutes. Remove and add to the mixture in the frying pan.
Gently stir everything together to coat. Pour into a 2 quart casserole dish. Bake, covered, at 350°F for 20 minutes or until hot and bubbly.
