Pasta Salad

Packed with veggies and a delicious dressing, this pasta salad is ready for your next barbecue.


Summertime!! The season of outdoor barbecues, impromptu neighbourhood get togethers and reunions.  Always fun and always a ton of fantastic food.  I love an easy throw together dish to contribute to these events and this pasta salad fits the bill.  You can always find an arsenal of pasta of many types in my pantry and this time of year, the fridge is usually full of fresh produce making this salad a favourite of mine.  So it was this particular salad I decided to make last weekend for a cousin get together.

Although the weather was horribly hot, (I bet you could have cooked an egg outside that day) it was great to visit and chat with people that we haven’t seen in years.

Cook your pasta according to the package directions, drain and leave to cool.  While you are waiting, mix all the dressing ingredients in the bottom of your serving bowl.  Add all your chopped vegetables and then the cooled pasta.  Stir till everything is coated well and chill.  The recipe has the basic veggies that you may have on hand during the summer such as tomato, bell pepper and red onion, but feel free to add in your faves.  Diced cucumber and sliced black olives would be especially nice.  If I had had them on hand, they would have been thrown in too.

Pasta Salad

Ingredients

  • 3 cups pasta tri colour curly or penne
  • 2 tomatoes, chopped
  • 1/2 cup red onion, chopped
  • 1 green or red bell pepper, chopped
  • Dressing
  • 1/4 cup creamy cucumber salad dressing
  • 1/2 cup olive oil, or vegetable oil
  • 1/4 cup vinegar
  • 1/4 cup sugar
  • 3/4 cup ketchup
  • black olives (optional)

Instructions

1. Cook pasta according to directions on package. Drain and set aside to cool.

2. In a large bowl, combine the dressing ingredients. Stir well.

3. Wash and chop the vegetables. Add to dressing mixture. Add cooled pasta and stir well to coat.

4. Cover with plastic wrap and chill in the refrigerator till ready to serve.
