Teriyaki Marinade

A delicious marinade for steak and other meats





Hope everyone is staying cool!  With the hot temperatures outside, we are definitely well into the summer season.  I think my favourite part of summer is being able to fire up the barbecue for meals to keep the heat out of the kitchen and also that barbecuing eliminates all those messy pots and pans.

By far, my husband's go to on the barbecue is a good steak.  He likes to marinade it all afternoon to give the steak flavour and to improve on it's tenderness.  As I would never remember to pick up a marinade when I was shopping and we are trying to get away from store bought items, it was time to come up with a marinade of our own.

Last summer I started making this delicious Teriyaki Marinade that has become the only one we use now.  It uses a minimal number of ingredients which you probably already have in your pantry and only takes 5 minutes to put together.



Combine soy sauce, water, oil, dried mustard, dried ginger, garlic and molasses in a medium bowl.  Stir well to combine.  Store in a jar in the refrigerator and shake well before each use.

To marinate your meat, add about 1/4 cup of the sauce to a small square glass baking pan. Add meat and turn to coat.  Cover and keep in the fridge turning the meat over every once in a while.

We like to marinate ours for about 4 hours, but if you don't have that much time, a couple of hours is fine.  The longer marinating time allows the meat to soak up the molasses and garlic giving the steak wonderful flavour.  Because I love that molasses flavour so much, I use 3 tablespoons of molasses in my mix to give even more punch.  I have given a range in the recipe to give you the option of using less or more.

In addition to the great flavour that the meat soaks up, the tenderizing affect means you can use a less expensive cut of meat and you don't have to use any barbecue sauce. 

Remove meat from the fridge about one hour before cooking so the meat has time to come to room temperature.  Cook your steak to desired doneness.

Teriyaki Marinade

Ingredients (makes one cup)
  • 1/2 cup soy sauce
  • 2 tblsp oil
  • 2 to 3 tblsp molasses
  • 1/4 cup water
  • 2 tsp. dry mustard
  • 1 tsp.ground ginger
  • 3 garlic cloves, finely minced
Instructions
Add all ingredients to a medium bowl and stir until combined.
Store in a covered jar in the refrigerator. Shake well before using.
Makes 1 cup
